Black Bean Salsa
This is what I'm eating right now and I feel I must share it with the world, or at least the portion of the world reading right now.
1 cup dried black beans
2T. lime juice
1/2 cup white onion, diced (I use WAY less)
1 fresh hot chile, diced (I don't use any)
3 finely chopped small tomatoes (I use WAY more)
1/3 cup fresh cilantro, minced
Bring beans to a boil in 3 quarts of water. Reduce heat, cover & simmer for 1 hour or until tender. Drain, reserving 1 T. of cooking liquid. Place reserved liquid & half of the beans in a small bowl. Add lime juice and mash the beans until smooth. Add the cilantro, onion, chile and tomato. Season with salt. Chill mixture for 4 hours.
I had a dream I was eating this the other day, it's that good.

Cold

Our house has an oil heater, and when it heats up the rooms, the radiators make loud popping and crackling noises. (I didn't know until recently that there really aren't very many places in the U.S. that don't have oil heat. I'm so East Coast.)
Here is a transcript from Superman's journal one night:
(heater comes on)
Dad:"What's that noise?"
Superman:"It's the machine."
Dad:"What does the machine do?"
Superman:"It makes noise."

Mimi is much shorter then most people at church, and when she feels like getting away from us, which is MOST Sundays, she just ducks under all the bodies that crowd the hallways and takes off. Today I was already in the car and Greg had to round up the children on his own, Mimi, of course, got away. Greg started looking, couldn't find her, and couldn't think of where else to look. He decided that she would end up in Chapel at some point, so he just stayed there, and yup, she comes running in thinking she's so sneaky.

Wedgie
Mimi and her new "I'm not paying attention to you" look. That's a muffin she's eating. And that's a toy basket she's sitting in.
I don't think calling these two "monkeys" would be descriptive enough. They are much more active then your average monkey...but I glad...most days...other days I'm exhausted._____________________________________________________________
Mimi gave Greg a kiss last night on his scruffy face--she reacted with "ouch". We discussed who has a beard and who has smooth faces. 3 smooth faces, one scruffy.
Me:"Will you have a beard when you grow up?"
Superman:"Superheros don't have beards."

whole milk
Mimi had her 2-year well-child appointment yesterday (where has the time gone!), the good news is she is closer to normal on weight but basically still tall and skinny. Last time I talked to the doctor about how to fatten her up, although we aren't worried about her health, it couldn't hurt. This time I told him what I've done to help her weight go up and he praised me more then once about what a good mom I am, I guess I've got him fooled.After the appointment we went to Chuck E. Cheese, as did most of the Metro West area.

Happy Birthday, you're two!
Your cake is blue!
All Mimi asked for was a party hat. Originally she wanted a black one, but I talked her into a blue one. Then we themed the whole party around Blue's Clues.
So we played Blue's Clues and Mimi and Superman got Handy-Dandy notebooks and pencils to find the clues.
Thinking in his thinking chair.
The clues all lead up to the cake. Mimi took the candle (one of the clues) and put it in the cake, she was done waiting.

Igloo
My third attempt at a snow igloo this winter. This one is MUCH smaller then the other ones I tried, and the only one that has even part of a roof. For all my hard work, no one really likes playing in it.I had a hard time convincing Superman to help, he kept saying, "I don't have a square bucket"
I did finally convince him to help, he would push shovel-fulls of snow to me, he's so strong.

Sick
Here's our NEW kitchen. It took the maintenance guys 4 days to do the whole thing. While taking this picture, Superman noticed the camera was NOT on him or Mimi and asked "Hey, why is the camera that way?"
Superman with his "Computer Dictionary" a.k.a. the home version of Deal or No Deal game. It reminds me of when my sisters and brother and I were little and we used the backgammon as a briefcase.He is wearing his stickers from the 2 doctors offices that he visited this week. No pneumonia for him. He is currently in this funny stage of life that he likes both Elmo and Superman. I hope he doesn't grow out of it too soon.
Mimi being the little-mother, feeding me her "soup" she made in her little kitchen. This was a tough week, lots of sickness, even the doctor called it confusing. I might even say that I feel like I've been hit by a truck, but I should be sensitive to those who actually have :) We are doing MUCH better.

Sick in bed on a Saturday afternoon with no cable can be bad, there is nothing on but sports. I was flipping channels with Superman, and we saw basketball:
Me (being annoyed at all the sports): "What is this?!"
Superman(being helpful and innocent): "Basketball"
I turn the channel, now it's on golf
Superman: "And this is golfball."
